Beat the eggs and milk together, season to taste with salt and pepper. Mix in the breadcrumbs. Heat a frying pan with some oil and spoon in the egg mixture. Fry till golden brown on both sides. Sprinkle with some lemon juice when serving. You can adjust the egg- Serve with potato salad or macaroni and cheese for a quick meatless dinner. |
